Fried apples are an appalachian staple. They're good as a side dish, dessert or breakfast. Lots of times, we'd have fried apples and biscuits for our supper. There are lots of variations on fried apples...some people like a tart apple like granny smiths...we were lucky enough to have a few apple trees. They were a red apple but I don't know if they were red delicious or some other variety of red apple. Also, some people perfer the skins left on the apples but my mom always peeled her apples...I like them peeled also. Some people like cinnamon in their apples...they are good like that but generally, we just stick with sugar and speaking of sugar, you can use white or brown. Any way that you fix them, they're a great meal.

Fried Apples

6 - 8 apples, peeled and cut into 8 wedges
2 Tablespoons butter or margarine
1/2 cup white sugar...use more if you like your apples extra sweet
3 Tablespoons water

In a heavy pan, over low heat, melt the butter or margarine. Add the sliced apples. Cover and cook until tender. Add the sugar, stirring thoroughly. Cook until the apples are carmelized.
