1. Brown ground beef in a skillet and cook well. ( I have not tried more than 5 pounds at a time)
2. Put meat in a colander and rinse well with hot water. Stir meat while rinsing to get the grease off.
3. Pour meat onto a cookie sheet or broiler pan lined with a towel or paper towels.
4. Blot meat well.
5. Return meat to the skillet and repeat steps 1-4, 2 - 3 times.

The meat should be hard and look like small pebbles. If it does not, put meat on a cookie sheet or broiler pan and place in the oven at 150 d F. Stir occasionally until the meat looks like small pebbles.

It can be stored in the pantry in mason jars. I vacuum seal mine.

To reconstitute: Put meat in hot water for an hour or more until soft.
