You can't get much easier than cornmeal mush...with just a few ingredients, you can have a hot meal and if you make enough, you can fry it for another meal.
Cornmeal mush/Fried cornmeal mush
1 1/2 cups yellow cornmeal
2 1/2 cups water
1/2 tsp salt
In a medium saucepan, heat water and salt to boiling. Add the cornmeal and cook over medium heat, stirring until it gets thickened, 5-7 minutes. You can eat it plain or add cheese or if you want it to be sweet, add sugar, brown sugar, molasses or honey. If there are leftovers, put it into loaf pan that's been sprayed with nonstick spray. Refrigerate. After the mush has become solid, remove it from the loaf pan, cut into slices and fry in bacon grease or butter. Again, it can be served sweet of savory.
