I do not know the original source of this recipe, other than it came from my husband's brother's x-wife's father to me ... I think. Anyway, it is a very simple, tasty appetizer ... like an upgraded jalapeno popper.

cream cheese

Rinse jalapenos, slice in half lengthwise, then remove stems and seeds. Fill the inside of each half of jalapeno with cream cheese. Wrap each jalapeno half with two raw slices of bacon, and use a toothpick to hold each slice of bacon in place. Put each 'armadillo' inside side up in a baking dish, and bake at 350F for about 30 minutes, or until bacon is fully cooked. Remove from the oven, let cool enough to eat, and then stuff your face with these bad boys as fast as you can, before anyone else gets their hands on them ... okay fine, maybe share some, if you're feelin froggy.

As far as I'm concerned, this is the only proper way to eat a jalapeno.
We have them all the time, and they are normally gone within 5 minutes of being served, regardless of count.
Eat 'em while they're hot. They get gross when cold.
