I just took a batch of Antelope salami out,and thought I'd share the recipe I use to keep Me going through the hunting season.This salami is easy to make,and is a hit on all My trips out into the field.

I take 1 lb of ground venison,Antelope,or elk meat and mix it with 2 tsp of Mortons tender quick,I add 1 tsp garlic powder,1/2 tsp whole pepper corns,1/2 tsp mustard seed,1 tsp of crushed red pepper(optional),mix thoroughly,and put it on Aluminum foil(shiny side out) and wrap it into logs.I then leave it in the refer for 24 hrs and poke holes in the top of each 1lb log then cook in a shallow baking dish for 1hr15min @300 degrees.I either eat plain or make sandwiches with slices.This can be made using whatever spices You like and your own variation of the recipe,but my girls will eat it this way.Enjoy,and happy hunting!
