I make sweet pickled jalapenos, after I fish all the jalapenos out of a jar I throw a few hardboiled eggs in the brine and let them sit a few weeks. Yummy.
FYI, the National Center for Home Food Preservation says that pickled eggs should be eaten within three to four months for best quality, but that does imply that they could be kept longer.
There is NO known safe homemade pickled eggs recipe or canning method. Always keep your pickled eggs refrigerated. I consume mine within 6 weeks or so. Mainly because they are pretty damn tasty and they don't even last that long

This is what I first followed to make my pickled eggs, except, I do refrigerate them:
I am about to make some smoked eggs temps are still good for doing it without getting out my fridge.
But pro tip if you are craving pickled eggs and and to cheat save your pickle jars don't dump out the juice toss in 6 eggs and let sit for a few weeks. Tasty easy treat I have played with the juice some doing half pickle juice and half jalapeno juice not bad.
Mmm, I loves me some pickled eggs.
