    Mrs Slippy's Famous Home Grown Lemon Olive Oil Cake!

    I am NOT a Baker, I'm a redneck Cook!

    But Mrs Slippy enjoys the baking process and after I constructed all of the ingredients for my Saturday Beef Stew, Mrs S took over the Kitchen at Slippy Lodge and got out a bunch of sugar, flour, lemons, eggs, Olive Oil etc to bake a Lemon Olive Oil Cake with Home Grown Lemons from our Lemon Tree! Lets see how this goes...

    3 TBS Corn Syrup
    4 Eggs
    1 cup sugar
    1 3/4 cup flour
    2 TSP Baking Powder
    1/2 TSP Salt
    Lemon Zest
    7/8 cup Olive Oil

    Then there is a lemon glaze I'll get into later but first we will bake the cake.

    Next thing I knew, the old woman took over the damn kitchen and flour and sugar was flying all over the place, looked like an Oklahoma dust bowl!

    I will admit that the smell of fresh homegrown lemons and the Zest that they produce is pretty darn good!

    Bake at 350 for 20-25 minutes. Mrs S likes these ceramic baking thing-a-ma-jigs. (Is it oK to say "jigs"?)

    Anyway, check back in 20-25. For now, Mrs S is working on some Glaze concoction...

    Looking good so far, now its time to prepare the Lemon Glaze. The recipe is pretty complicated so bear with me;

    Juice of a bunch of Lemons
    Dash of Water
    Powdered Sugar

    correction; Whisk above stuff. Glaze the hell out of the cakes.

    Not up to her standards by any means . But after seeing that I did have to make some lemon bars. Lemons and Limes never get enough .

    Mrs S's Lemon Olive Oil Cake was fantastic. Very very sweet, moist and just the right amount of tart lemon-ness. The only criticism was the olive oil. It took over the cake to some degree. Did I go back for 2nds? Heck yeah!

    Do I want her to make it again? Probably not, one and done for me! I'd prefer her to make a simple cake with no olive oil but use the same lemon glaze and such.

    However, Slippy Approved!
