Slippy's Famous Saturday Afternoon Beef & Vegetable Stew!

Its turning out to be a Glorious Saturday Afternoon at Slippy Lodge! Chores are done and time to settle in and put a pot of vittles on the stove. Had an Eye of Round Beef in the freezer so thawed it and trimmed the fat and cut into cubes.

In a large metal stock pot, render the trimmed fat and add some salt and a touch of Olive Oil. Toss in the cubed meat and brown on all sides for about 20 minutes or so, stirring every now and then.

Add 1 whole chopped Texas Sweet Onion
Add 1 tablespoon Chopped Garlic ( I used some garlic from a jar today)

Stir until onions and garlic are carmalized.

Add 1 large can of Tomato Sauce
1 cup of Beef Bone Broth
1 large can of Vegall (with large potato chunks)
1 regular sized can of corn
a few dashes of Worcestershire Sauce
    Lawry's Seasoning Salt to taste.
    Black Pepper
Lemon Pepper or Lemon Zest (I added both today)

Allow to "Stew" for a few hours, stirring occasionally as it simmers.

Serve with some cornbread. Pairs well with a bourbon or cheap red table wine...

I didn't even know Vegall was still on the market. I haven't seen it on the supermarket shelves in years. And when I say years, I mean decades.

I know it used to be sold in Washington because I knew what it was and I've never lived outside the PNW.
