    Pressure canner! I stand corrected. However, a pressure cooker serves the same purpose. My mother canned tomatoes all her life just a few pints at a time in the same pressure cooker she cooked roast beef in. We couldn’t afford a large pressure canner. The main point is to process the jars at 10 psi or more (depending on recipe and altitude)

    They need a new term for the process. We should call it pressure bottling meat and other low acid food.

    Chicken thighs, skirt steak, pork loin, and corned beef. I had to use @The Tourist 's knife to cut the corned beef because it's so tough prior to cooking. None of my kitchen knives was sharp enough.
