My first canning of the season

This is a discussion on My first canning of the season within the Garden, Canning, Long Term Food Storage forums, part of the Survival Food Procurement category; I canned these snaps (green beans) Tuesday night, finished them up around midnight...yes that is kinda late but you gotta do what you gotta do ...

    My first canning of the season

    I canned these snaps (green beans) Tuesday night, finished them up around midnight...yes that is kinda late but you gotta do what you gotta do when you have the time! I love preserving the harvest!

    I'm growing Kentucky Wonder & Genuine Cornfield pole beans. The Kentucky Wonder is growing up my fencing surrounding the garden & the Cornfield is growing up my corn stalks. Yet to pick them yet. I grew up eating the flat green beans, such as Kentucky Wonder.

    Congrats. Nothing better or healthier than goodies from the garden in the middle of the winter especially when stored using no electricity.

    I use a Presto pressure cooker with the different weighted pressure regulator...I hot packed the green beans which means I blanch the beans for five minutes, place beans in pint jars cover with boiling water leaving 1 inch head space, put on lids and rings...process for 20 minutes at 10 pounds pressure...follow instructions with your canner (may be different instructions)...FYI, I suggest purchasing a Ball canning book, available at Walmart and just about anywhere you get your canning supplies...hope this helps.

    I use the All American Canner.
