    I Love This Old Italian Mama

    When it comes to the rules, follow the 'Ball Book' not her. But when it comes to puttin 'em back do like she does. She's the Picasso of canning; Very prolific! God bless her. Her shelf of red sauce does my heart good to see. What a mama.

    Mama Mia...that looks Eyetalian! Bet its mighty tasty. My Eyetalian Lady friend from Noo Yawk City who ran the sub shop and taught me how to make the worlds greatest meatballs say when you aint got time or the talent to make it yourself...try mixing three different brands of canned sauce in the same amounts...say three cans...One Progesso..one Hunts..one Contandino for example. She say one is too salty..one too sweet..and one too. Sour. Mix and match makes em balance out. lol. She also sold jaunine Texas bbq which she cooked into some kinda cross between a smoker and a pressure cooker. You could eat it with a spoon. That was not her highest talent.

    A few years ago some good customers of mine (retired city slickers) wanted to learn how to can tomatoes. They were going to buy everything. I told them just to come over as I had everything they needed. They were excited.

    When they arrived, they said...okay what's first?

    I said...go out to the garden and pick the tomatoes....lol.

    We have to pick the tomatoes?

    Well, there not going to jump off the vines and get in the kitchen by themselves.

    I took them through all the steps from the comfort of my kitchen table and after some hours of work, ended up with their prize...12 jars of tomatoes each.

    They haven't asked to can tomatoes again....

    Love this lady, and have watched many of her videos. Even made her Chicken Parmigiana, Pizza and Ravioli. Mmmm, thatsa goot
