So my friend and I had a canning day and made cream of chicken soup. Upon checking the processing time we discovered that cream, flour and other items aren't supposed to be canned. No big deal as we just froze them for later quick on the go meals. But now I've been wondering.....is the warning to not can milk based or flour based food an actual issue? Or is it like the "authories" that say you can't can butter?
Does anyone know if there's a way to can cream and/or flour based foods safely?
I don't have any answers... but.... you can store flour and dehydrated milk separately... then can the other meal ingredients... and mix them later. It might be simpler and less risky until you know more.
I do quite a bit of canning and have never come across a recipe for cream of chicken soup. I checked my ball canning books and could not locate a recipe. Im thinking you could can all the broth and vegetables and store the flour and Milk(powered) separate and dry.
I can chicken noodle soup a lot but leave out the noodles and store them dry. I guess the noodles dont hold up well in the pressure cooking process.
Looks like I'll be sticking with extra powdered milk and flour instead and just have the base on the shelf. I'll make some small vacuum bags of the stuff to toss in the food bag just in case I can't readily cook.
UHT milk keeps a good while. Actually tastes pretty good.
